The Lemon-Garlic Fish Starter

 

It takes 20 minutes and a handful of ingredients to get it from the stovetop to the table top. It is pan fried with the magical garlic butter sauce and with dash of lemon juice & freshly crushed black pepper. Want it hotter, add in the jalapenos.

 

Let’s start. 

You need a Pan and a Spatula.

 

Ingredients

For the Fish preparation:

  • Fillets of any kind of white fish: 350 gms – cut into square or rectangular pieces.
  • 1 tsp. Salt 
  • ground black pepper
  • 4 tbsp. corn starch for coating the fish fillets
  • 3 tbsp. cooking oil

 

For the Sauce:

  • Minced garlic 1-2tbsp. (depending on your taste acceptance for garlic)
  • 3 Tbsp. of melted butter.
  • 2tbsp. of lemon juice (kafir lime if available)
  • Lemon zest ¼ tsp.
  • Salt
  • Crushed black pepper
  • 1 tbsp. of thinly sliced spring onion 
  • 1 tsp. of parsley
  • 1 tsp of sliced jalapeno (optional – you can also use cayenne as per your taste)

 

Instructions for preparing the fish:

Wash the fish well and pat dry with a clean cloth. Now, season the fish with salt and ground black pepper. Keep it aside for 5 – 10 mins. Now take each piece of fish and lightly coat them with the corn starch. It should be very light, so that the texture doesn’t get affected. Don’t coat all of them together. Coat them in batches just before you are ready to put them in the pan.

Meanwhile, heat the cooking oil in the pan. The oil should be hot so, that the fish don’t stick at the bottom of the pan. Now fry these coated fish fillets in batches. Give sometime for one side to get fried and then only turn it with a spatula. Fry all of them well and keep it aside. Do not over fry them, so that they turn brown. Keep the fried fish pieces aside.

Instruction for preparing the sauce:

In the same pan with the leftover oil, add in the butter. Before it turns brown, add the minced garlic as required. Sauté and add little salt. Gradually add jalapeno, spring onion, parsley (little to be kept aside for garnishing), and lemon zest. Add the lemon juice and immediately put the flame off. Add in the fried fish and smear it with the sauce. Add in the freshly crushed black pepper. Garnish with spring onion, parsley, and a squirt of Kafir lime juice.
